This is your sign to level up your rice game! This isn’t just any fried rice—it’s an explosion of tangy, spicy, and umami flavors! It’s packed with juicy shrimp, tender calamari, milky shimeji mushrooms, and all that stir-fried to perfection! ✨
Everything you’ll need:
One cup of cooked sushi rice
1 tbsp Chinese chilli bean paste
Handfuls of shimeji mushrooms
Small shrimps
Baby calamari (chopped)
An egg
Scallions (separated into white and green parts)
Kewpie Japanese Mayo
Bibigo seaweed flakes
Black pepper
Salt
Heat a pan with a little oil over medium-high heat. Crack the egg into the pan and fry until fluffy. Set the fluffy egg aside.
Add a bit more oil to the pan. Sauté the white parts of the scallions with the shrimp, calamari, and mushrooms until the seafood is cooked through and the mushrooms are tender.
Add the Chinese chili bean paste and its oil to the pan. Stir well to combine the paste with the seafood and mushrooms. Return the fluffy egg to the pan and mix everything thoroughly.
Add the chilled sushi rice to the pan. Stir-fry for 2-3 minutes, breaking up any clumps and ensuring all ingredients are well combined. Season with salt and black pepper to taste. Stir in the green parts of the scallions.
Transfer the fried rice to a bowl. Top generously with Kewpie mayonnaise and Bibigo seaweed flakes. Enjoy! ✨
